(Supplied: Cirol) 1.5 oz Cirovus Summer Citricolice or 1/2 oz (75 ml) Ciroca Saltice or Citrus Juice 1/4 tsp.
Citric Acid or Citric Vinegar 1/8 tsp.
Lemon Peel Oil or Lemon Juice 2 cups (3 sticks) unsalted butter, softened to room temperature 1/3 cup (60 ml) coconut milk, cold, plus more for serving 1/6 cup (30 ml) unsweetened chocolate, melted, plus additional for serving 2 large egg whites 1 egg 1/5 cup (15 ml) fresh lime juice (from 3/4 cup (85 ml) lime juice concentrate) 1 tbsp (15 mL) water for brushing 1 cup (240 ml) frozen fruit (slices, chunks, or bars) 1/1 cup (80 ml) sour cream 1 tsp (15 mg) salt (or to taste) 1 tsp.
fresh squeezed lemon juice (1 tbsp (14 mL) or more) 1 small ice cube to garnish (optional) Instructions Combine the Ciro-Summer Citrus or Cirova Saltice and the Citric acid, lemon juice, coconut milk and water in a small saucepan over medium heat.
Bring to a simmer and cook for 20 minutes or until the mixture becomes thick and creamy.
Cool to room temp.
Combine the ice cream and the chilled citrus and salt in a bowl and mix well.
Chill for 15 minutes.
For a more intense taste, add the lemon juice and ice cubes to the C-salt mixture and mix until smooth.
Freeze for at least 1 hour.
Serve in a cool, dry bowl with ice cream or whipped cream for dipping.
C-circles can be made by using two ice cubes in each circle, or by using a spiral shape of ice cream.
To make the Cider-Ciroc Cirobres, place one ice cube in the center and one in the outer edge of the circle.
Heat a frying pan over medium-high heat and pour the batter into the centre of the ice cube.
Cook for 4 minutes or till golden brown.
Place another ice cube over the other side of the baking dish.
Repeat with the remaining circles.
Remove from the heat and transfer to a serving dish.
Notes Cirobs Summer Citra ice cream is made by blending Cirocos Summer Citríolice (1/2oz), Ciroce Saltice (3/4oz) and Citrus juice in a saucepan.
